We have never been carried away by commercial success, because our primary objective has always been to give a high level product. Quality olive oil gives richer flavours, is more digestible, and is better for the health as well. Dolciolio: The olives are quite ripe at that point and give a softer, more delicately flavoured oil. Primolio: the oil is very low in acidity and very ftavourful as well. It is stored in cool spaces and filtered with cotton pads before release in order to avoid the deposit of vegetal water which would alter and compromise the taste. Colle del Giachi: in terms of its balance of flavour and finesse this is the finest of all the Giachi live oils. Snocciolato: in recent years there has been a new interested in what might be called "pitted" olive oil, i.e. an olive oil which has been made from olives which have been pitted before pressing. Nanni di Baccio: this is an olive oil which is highly recommended for use in the kitchen given its extremely reasonable price. Giolio: it is a good extra-virgin olive oil at a low price, very suitable for use in the kitchen where it brings out all the flavours of food, but low in acidity and very digestible as well.
